Ich hatte Spaß, so viel frisches Grün aus unserer 1. EAM Kiste 2017 zu verarbeiten und möchte ich euch an dem Ergebnis teilhaben lassen.
Die Brennnesseln wurden in gedünsteten Zwiebeln spinatmäßig verarbeitet, die Masse in die Pfannkuchen gestrichen und dann nochmals im Backofen mit Parmesan überbacken.
Dazu den Salat und ein Glas Rotwein draußen auf der Terrasse serviert – welch ein Genuss!
Dass wir mit unserem Zusammenwirken etwas Wunderbares schaffen, gibt mir etwas, das sich großartig (fast schon göttlich) anfühlt.

Ich hab tatsächlich auch 2 Blätter nicht gekannt, also die fleischigen und die leicht violettet – ich habe sie vom Geschmack als Kresse eingeordnet und zu Pesto verarbeitet.
Der Rest ergab mit noch etwas gesammelten Bärlauch eine gute Suppe.

Ja, das hat genial geschmeckt, obwohl es von der Art her ein bisschen in die Richtung von gefüllten griechischen Weinblättern ging, die ich eher nicht so gerne mag. Wenn man das noch etwas säuerlich eingelegt hätte, hätte kaum einer den Unterschied gemerkt, denke ich.

Ganz genau vor 12 Jahren hatte ich schonmal ein Angebot beim Kartoffellegen mitzufahren, das hat aber nicht geklappt.
Kartoffeln sind mein Leibgericht.
Bereits damals, als ich als Kind mit meinen Eltern und Geschwistern Ferien auf dem Bauernhof gemacht habe, hatte ich den Wunsch mal dabei zu sein, wenn die Kartoffeln gelegt werden. 50 Jahre musste ich darauf warten, bis sich der Wunsch erfüllte.
Manches dauert eben länger und wird dann aber auch richtig gut.
Wenn der Peter mal einen Helfer braucht, bin ich gerne dabei.

Wir hatten gestern ein ganz leckeres Abendessen. Der Mangold ist derzeit ein Traum. So zart und schmackhaft, dann noch Ruccola kleine geschnitten und beides wie Spinat zubereitet. Ht ganz toll geschmeckt. Und weil ich keine soooo begeisterte Köchin bin, gab`s veg. Nuggets dazu. LG Maresa (per sms an mich)

Er ist ein interessantes Kräutlein – und wächst als Busch.
Hippokrates verwendete den Wermut bei nachlassendem Gedächtnis. Aktuelle Forschungen bestätigen, dass ein Extrakt aus Wermut bestimmte Rezeptoren im Gehirn aktivieren und das Nachlassen der Gedächtnisfunktion bei Alzheimerpatienten aufhalten kann.
Die Bitterstoffe regen die Produktion aller Verdauungssäfte an (in Magen, Bauchspeicheldrüse und Leber). Wermut hilft also bei allen Arten von Verdauungsbeschwerden, Unverträglichkeit von Nahrungsmitteln und Blähungen und beim Entgiften.
Wenn Du keinen Appetit mehr hast, oder das Gefühl, das Essen liegt dir im Magen, gönne deinem Körper vielleicht ein Tässchen Wermuttee. 🙂

Mich begeistert der Wermut auch mehr und mehr. Ich möchte unbedingt einen Ableger von dem Riesenbusch, bislang haben die in die Erde gesteckten Ästchen aber noch nicht ausgetrieben. Ich bleibe dran – Du bekommst auf jeden Fall auch ein Pflänzchen, wenn das klappt! Das Kraut ist ganz bestimmt gesund, so wie es schmeckt!!!
Das wäre super – ich werde gleich mal schauen, was für Standortbedingungen der Wermutbusch braucht. 🙂
Ich hatte auch Mairübchenblätter von einem besonders schönem Mairübchen mitgenommen und habe sie dann klein geschnitten und in Essig eingelegt, mit etwas Senfsamen, Agavensirup, Kräutersalz und Pfeffer. Ich dachte dabei an das scharfe koreanische sauer vergorene Kimchi aus Chinakohlblättern. Der Geschmack der eingelegten Mairübchenblätter mit Essig ist fein, sie sind eine leckere sauer-scharfe Beilage zu diversen Gerichten, und sie hielten sich bis jetzt einige Tage. Aber wahrscheinlich nicht so viel länger, da ich alles nur mal so schnell gemacht hatte. Es war einfach ein Versuchsballon. Wahrscheinlich ließen sich Mairübchenblätter noch besser mit Salz vergären wie im Kimchi, oder man könnte sie in ein Kimchi mit Chinakohl mit einbauen. Es wäre vielleicht einen Versuch wert. Zwiebeln hatte ich auch noch mit hinein gegeben in die sauer eingelegten Mairübchenblätter.
Passt zwar jetzt nicht zu dem Post oben, aber trotzdem: Der Gemüsehaus-Salat ist im Moment einfach köstlich. Meine Mama schwärmt auch davon. Heute mit im grünen Salat: Melde, Kapuzinerkresse (Blatt und Blüte), Franzosenkraut, Vogelmiere, Sauerklee, Minze (allles klein geschnitten und aus dem Gemüsehaus), plus ein wenig Zitronenmelisse und Teefenchelkraut aus Eigenanbau. Nach so einem Salat fühlt sich mein Körper so richtig zufrieden und ich fühle mich gut gelaunt und voller Energie! Das Gemüsehausgemüse ist ein Geschenk, auch für mehr Vitaltät, Gesundheit und Lebensfreude! Danke!!!

Topinambur – die Winterknolle,

Hier mein absolutes LIeblingsrezept –
Zutaten:
1 kg Topinambur – nur waschen mit der Gemüsebürste, nicht schälen
1 große Zwiebel – diese natürlich schälen 😉
50 gr Sonnenblumenkerne
3 El Teff Mehl vom Bauckhof (glutenfrei), es geht auch anderes Vollkornmehl
2 Eigelb
Pfeffer, Salz
Zubereitung – geht gut und sehr schnell im Thermomix:
Einfach alles zusammen in den Mixer geben (die Knollen und die Zwiebeln vorher klein schneiden) und zerkleinern und verrühren. Nun kommt der besondere Trick:
zum Braten eine Gußeiserne Pfanne nehmen! Dann werden die Teilchen schön knusprig.
Mit einem Esslöffel kleine Portionen in die Pfanne mit Öl geben, glatt streichen und kross braten.Das Öl sollte natürlich hoch erhitzbar sein.
Dazu passt sehr gut Möhrencurry mit Rosinen und Petersilie, da dies auch etwas süßlich ist. Lasst es Euch schmecken…
